That’s right. Sweetheart. As in Love. Romance. Valentine’s Day.
Smoothies are wonderful creations. Dare I say nearly as perfect and diverse as sandwiches? You can get every food group in there, have one any time of the day, have them on the go, and make a different one every single day if you choose. You can even sneak ultra healthy ingredients in them without the kids knowing you did. Promise.
Let me introduce the list of characters:
First, we have beets. I have been on a total beet kick lately. Love’em. Next up is kale. Then mango, pineapple, banana, and chia seeds. Top it off with coconut milk and my-oh-my do you have something spectacular. No need to sweeten this baby.
And then comes the kicker.
A heart beet. Oh my. (It was my husband’s idea.)
- 1 beet
- 1 cup kale
- 1 mango
- 1 banana
- 1/2 cup fresh pineapple
- 2 Tablespoons chia seeds
- 1 can full fat coconut milk
- Combine all ingredients in blender and pulse until smooth.
- Serve chilled.
- Rinse beet well before peeling and chopping.
